I used to go weeks without eating a single vegetable. Really. I spent many years trapped in some pretty unhealthy eating habits but in more recent times I find myself getting a little more educated and wise with my choices. Sure, there are still days when I’ll have only had a large coffee and a bagel and then another coffee for good measure. Those are the bad days, when I let the busyness of life and work get in the way of my remembering to properly fuel my body. Then there are the days when I have farm-fresh eggs on whole-grain toast, and then I’ll make a green smoothie with a wide array of fruits and veggies, and then finish the day with a well-rounded meal with local meat and tasty vegetables. Those are the good days. We’re trying to make more days good days.
The thing I find with incorporating vegetables into one’s diet is that you have to be creative. If you eat the same plate of steamed carrots every night, after a week you’ll be bored. We try to jazz things up with healthy salad dressings for our veggies and were excited to test out Kraft’s new Salad Vinaigrettes.Â
We sampled the Berry Balsamic, Garlic Parmesan with Roasted Caulifower, Fire Roasted Tomato with Basil and Roasted Yellow Pepper, Garlic and Lime.
All of these dressings are made with real fruits and vegetables and have a mere 25-30 calories per teaspoon. The tastes are fresh and bold and I am happy to report there are no artificial flavours or colors in them. They added a lot of flavor and I found the kids gobbled up their plates of fresh baby spinach when the dressings had been drizzled atop.
The overall favorite in our household was the Berry Balsamic dressing. Brinley would basically just suck it off the leaves of spinach. Classy table manners!
