Thanks For Sharing

It’s nice to know I’m not the only mom out there who feels like giving her notice sometimes. Thanks for sharing your own personal tales of woe and frustration with your kids. It’s nice to know that we’re all united in our misery!

On a completely unrelated note, last night I made Eggplant Parmesan. I thought I didn’t like eggplant, but we were given four of them from a friend and rather than let them rot in my crisper, I thought I would use them up. I found this recipe and I am an Aubergine Believer now! It was delicious! And not spongey or weird. Give it a whirl!

And while we’re on the topic of great recipes worth sharing, you have to try these amazing Buttermilk Pancakes. We’ve been having breakfast for dinner (nothing says 5:00 like a sizzling pound of bacon) about once a week and these pancakes are always the star of the show. 

Do you have any recipes I need to test? Let me know, since I’m always looking to claw us out of my perpetual meal planning rut.

  • We just had breakfast for dinner last night! I love it! But we always use the instant pancakes… and I always crave a ‘real’ pancake.

  • I thought about your last post all day yesterday. I think if we posted only about meltdowns and tantrums, that’s all we’d ever read about! :) My heart goes out to you, though. I’m struggling with my two-year-old little girl right now, but at least yours is finally potty trained! Congrats!!

  • I made Eggplant Parmesan when I was pregnant with Liliana and LOVED it. Will have to try that recipe!

  • I wish Jordan liked breakfast for dinner. He always protests when I suggest it. darn it!

    I love eggplant parm but I love all things eggplant so that’s not saying too much. glad you found another vegetarian recipe that you enjoy and can add to your collection.

  • I just wanted you to know how much your honesty means to those of us out here who are also trying to parent a “strong willed” or “difficult” child.
    My friend Bree Andritz, formerly Bree Hamilton (we both grew up in Summerland, her more than me) turned me on to your blog one night when I was lamenting about my two year old.
    It was SO comforting to know I wasn’t the only one who thought their child may completely destroy their sanity, if not their will to live. And this is coming from someone who wanted to have kids desperately since they were 12!
    I even showed my husband your post last night because of how well I could relate to it. He said he was glad to know we weren’t the only ones out there with a “challenging” kid, and that he really enjoyed your writing style :)
    So thank you. For your brutal honesty and openness. You will probably never know how many people you’ve touched.

  • Hi! I don’t think I’ve ever commented on here before…but I found you through Angella’s blog…which I found through someone else’s blog…you know how it goes.

    I love reading your posts and just wanted to let you know that I write a small cooking blog and update it with my cooking plans and favorite recipes/techniques. If you are ever in a rut, feel free to stop over and look around :)

  • 1. Open a can of Spicy Thai Chili Tuna (Clover leaf is my favorite)
    2. Dump it onto a sliced avacado (or onto celery sticks)
    3. Sprinkle with salt and pepper.
    4. Eat
    5. Rub satisfied belly.

    Seriously…this has been my pregnancy craving and it’s so yummy…and carb free!

  • Hey I have the recipes for Starbucks Oat-Fudge Bars and Starbucks Ginger Molasses Cookies… they are too yummy!!! and they even look and taste like the real thing ;)

  • I am loving the “deceptively delicious” book right now. It has so many good recipes in it and I like the challenge of figuring out how to get more veggies into things.
